My favourite is easily the Hotel Okura in Tokyo, Japan.
It's a chain now; there are Okuras across Japan and seven others around the world. The hotel in Tokyo is the original. It's peaceful and brilliantly organised and has everything that you'd expect in a good business hotel - good service and modern facilities. There is a great Japanese garden where you can sit while having breakfast, which is a good start to the day, very peaceful. There are lots of restaurants offering different cuisines, although I tend to eat in the restaurants that specialise in Japanese food because I love it; there's a French one that I've visited once in the past few years. The hotel has excellent sports facilities, in particular a good swimming pool. The rooms are perfect business rooms. They're very quiet and everything works! They have a fax machine and computer access.
I've been going to Okura for years, and I usually go twice a year.
I recently visited Hartwell House hotel near Aylesbury in Buckinghamshire. There was no special occasion we had to go to - I just went for a long weekend with my wife and it was extremely restful.
It's everything you'd imagine the perfect English countryside hotel to be, with big fireplaces and good British food, and it's not at all cheesy - it's all done in very good taste. The rooms are beautifully decorated.
I really enjoyed myself. One of the best things about it is the location. We went on a frosty January weekend and the surrounding country was looking very beautiful. The hotel's sports facilities are particularly good. I enjoyed using the pool and the sauna, and my wife used the spa and the beauty treatments. We never felt that we had to go into town for entertainment or to get anything, as everything we needed was there. We enjoyed some good seasonal cuisine too. .
